Food safety in the inpatient care units



Undoubtedly the food safety looks of particular importance in hospitals and other inpatient units. The immune reactions of ill persons are often inadequate, thus they are more susceptible to pathogen microorganisms including the causative agents of food borne infections. The requirements of food supply in these institutions demand more caution and technological accuracy than in other catering services. Also the HACCP system in hospitals should be developed and operated more precisely. The research in this topic is at the very beginning and a well-founded scientific searching network is sorely needed for the sake of enlargement and exposition of our knowledge about the food safety in hospitals. It will serve for the improvement of health care, the safe recovery of patients.
